Vegetable Soup

Brown 2.5 lbs ground chuck.

Add handful of salt.


Add:

Whole onion chopped

2-3 cans Petite Diced Tomatoes (I squish them with my hands* Maleah)

Add 3-4 cans of water

Bring to a boil


When boiling, add frozen black eyed peas. Cook 20 minutes. Add 1 bag frozen baby lima beans. Cook a little while longer. Add salt and pepper to taste.


Add small diced potatoes (about 4) and carrots (about 2) simmer until potatoes are tender. Add about 3-4 cans of shoepeg corn. This is where you can add okra and cabbage if desired.


Add water as needed, especially if you want "soup stock". Sometimes I add a small can of tomato sauce*. Add extra pepper and salt if needed.

Serve with crackers, cornbread or lacey fried cornbread. Add water or beef stock when reheating or while serving if it gets too thick.
