Squash Casserole

Cook and drain in colander 3 pounds of squash, sliced, a medium onion chopped, and salt to taste. Mash. Add 1/2 pint sour cream, 1/4 cup butter, 1 cup grated sharp cheese and 20 crushed soda crackers (saltines). Place in casserole dish and sprinkle paprika on top. Add dabs of butter. Bake for 30 minutes on 350 degrees. Can make a day ahead and then bake.
