Tomato Casserole/Scalloped Tomatoes

Enough for one layer in an 8x8 casserole dish. Double or triple, for your pleasure (and depending on size of serving dish).

* 6 slices of plain white toast

* 14 oz can Hunts Diced Tomatoes (Roasted Garlic or Basil, Garlic & Oregano)

* 1/4 cup finely diced onion

* 1 tbsp sugar

* salt and pepper, and Italian seasonings to taste

* 1/2 stick of butter

* grated or shredded Parmesan cheese

Mix tomatoes, onion, sugar, salt, pepper, Italian seasonings and butter together in sauce pan, and simmer for 10-15 minutes, until well blended. Cut 4 slices of toast into small square cubes, and layer on bottom of casserole dish. Sprinkle with Parmesan cheese. Top with tomato mixture, and sprinkle with Parmesan cheese. Cut 2 slices of toast into thin rectangular strips, and layer on top of casserole. For added flavor, add pats of butter on top layer of toast. Bake covered for 20 minutes at 375, then 10 minutes uncovered - or until hot and bubbly.
